Fresh homemade pancakes are a great way to start a lazy day in or a great morning with friends and family.
Follow this super easy Pancake recipe using only a few ingredients and only a few minutes of prep time. Fill these delicious handmade pancakes with fresh fruit or drizzle them with maple syrup.
For fresh fruits, I suggest using either of the five options:
- Strawberries
- Kiwis
- Blueberries
- Peaches
- Bananas
And for a delicious, rich drizzle, you can never go wrong with some pure organic maple syrup.
Now lets get started!
Ingredients:
- 2 cups all-purpose flour
- 3 tablespoons sugar
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 ¼ teaspoons kosher salt
- 2 ½ cups buttermilk
- 2 large eggs
- 3 tablespoons unsalted butter, melted
- Vegetable, canola or coconut oil for the pan
After mixing all your ingredients, you'll want to:
- Make sure the heat is distributed evenly (I like to use an electric griddle)
- Allow a few minutes for the batter to rest (to activate the baking powder)
- Use a baking spray that is nonstick (yes, even on nonstick pans)
If you're using a skillet, make sure the heat is evenly distributed. Allow your pan to heat up while you prepare the batter; a simple test for readiness is to flick a small amount of water onto the pan. If the water is hot and ready to use, it will immediately sizzle.
To keep your pancakes from sticking, use a dab of batter and quickly wipe the excess off the surface with a paper towel.
I highly suggest using a spouted measuring cup to pour the batter onto the pan. You'll get happy, uniform, beautiful pancakes this way. When pouring your batter onto the pan, begin in the middle and pour in a circular motion to help the batter spread into a nice round circle.
Timing is everything:
Pretty pancakes are not to be rushed. They should be golden brown on the first side. When bubbles start to develop and explode on the top, you'll know they're ready. To accomplish a perfect flip without the batter sliding around, carefully place your spatula (I like silicone or plastic over metal) all the way below and turn them over with your wrist.
